anywhere he wants as long as he stays in the u.s. a judge friday released dominique strauss-kahn from the u.s. after prosecutors admitted there are problems with the rape case against him. sean hennessey of wcbs in new york has more. >> on this weekend strauss-kahn is enjoying his own freedom. the case is now hanging by a thread. for the first time in weeks, dominique strauss-kahn left his manhattan apartment finally free from house arrest gone with the ankle bracelet after prosecutors admitted there are problems with the housekeeper who accused him of sexual assault. >> there are substantial credibility issues. >> reporter: prosecutors admitted the 32-year-old told them a series of lies and her

whereabouts after the attack, first claiming to hiding in the hallway, but later admitted to cleaning two rooms. >> i understand the circumstances surrounding the case from the viewpoint of the parties have changed substantially and i agree. >> reporter: the judge quickly returned $1 million bail to the former head of the international monetary fund, the 62-year-old strolled out of court all smiles, a far cry from the dark days in may when he was paraded before cameras in cuffs. it cost strauss-kahn his job and taking him out of the running for the french presidency. >> we believed from the beginning that this case was not what it appeared to be. >> reporter: the woman's lawyer, ken thompson blasted the d.a. asserting a sexual attack did happen. >> it is a fact that the victim here made some mistakes but that doesn't mean she's not a rape victim. but you cannot discount the powerful physical evidence that

was left behind during that assault. >> reporter: legal experts say the accuser's credibility cripples the prosecution's case. >> this was always going to be a tough case. it was always going to be a he said/she said. >> strauss-kahn's lawyers say this case is a reminder of how easy it is to be a rush to judgment. strauss-kahn is still not allowed to leave the country. authorities continue to have his passport. he's back in court july 18th. >> for perspective on what's next, we turn to legal analyst and former federal prosecute your sunny hostin. he's free to travel throughout the united states but the judge did say the case is not over. >> the prosecution hasn't dropped charges yet. i anticipate that is coming. the district attorney sent what is called brady attorney, exculpatory letter. there be problems with this

complaining witness and i think the problem is that she cannot withstand cross-examination on the witness stand. this case it was very much from the beginning a he said/she said. they were the only two in that hotel suite. if she can't withstand cross-examination especially someone as skill as ben broffman this case is going nowhere. >> why not drop the case right now? >> that's a team decision. the decision to drop a sexual assault case that has been indicted in front of a grand you jury is a difficult decision to make. you have a victim to consider and the large picture. there's a chilling effect when this happens a lot of women don't want to come forward, reluctant to come forward. a lot of pieces of the puzzle, but after reading this letter, i suspect that this case is going away and that the charges will be dropped and we'll probably

see that july 18th. >> the letter you're referring to, the alleged victim her credibility is called into question, everything from her asiylum application, incorrect information to what she says happened in the hotel room and the series and sequence of events. in the case of a rape victim or somebody who alleges they are a rape victim, how important is their credibility in terms of proving that case against a defendant? >> it is paramount, especially in this type of case where there are only two people. there aren't any independent witnesses here. while there may be forensics, the defense is sure there's evidence of sexual contact, because this was consensual. he said that all along. he said that from the beginning. something happened but it was consensual. when you take the forensics out and just have one person's story against the other person's story the credibility of the victim of the accuser is paramount. now that her credibility has been significantly undermined and the prosecution has told the

judge that it's undermined the prosecution told the defense team it is undermined, in a case like that the case goes away. >> sunny hostin thanks for joining us. we appreciate it. here's russ. >> thank you very much. a showdown is looming in washington over possible default by the federal government next month. the senate cut short its holiday vacation and will return to washington after the july 4th weekend. it will try to raise the national debt limit and rein in spending. whit johnson is in washington. >> reporter: democratic sources familiar with negotiations say a debt limit deal needs to be reached by july 22nd in order to get it through congress in time. meanwhile president obama took off to camp david for the weekend, leaving behind two sides that are still far apart. with president obama and congress off for the holiday weekend, tensions in washington were left simmering. they'll heat up again next week

when all sides resume deficit reduction efforts that include raising the debt limit. bipartisan talks that identify more than $1 trillion worth of spending cuts stalled when democrats insisted on revenue increases. >> the main obstacle, i want to be very clear, to finding common ground is republicans stubborn insistence on protecting taxpayer funded giveaways to corporations and individuals that don't need the giveaways. >> reporter: after a news conference in which president obama berated congress for not spending enough time in washington -- >> you stay here. let's get it done. >> reporter: the senate canceled its july 4th break, unamused republicans reiterated their opposition to any tax increases and said it's the president who isn't getting the message. >> he says it isn't worth his time to come down and talk to republicans. i remember when he talked to republicans before and all we got was a lecture. >> reporter: friday treasury

secretary timothy geithner repeated a warning to act quickly, urging congress to avoid the consequences of a default crisis. come august 2nd the u.s. could be unable to pay its bills for the first time ever. the rhetoric is getting louder. >> it's hard to see how they'll have a major breakthrough next week. >> reporter: with so much emphasis being placed on the upcoming week we checked with congressional republicans, democrats and the white house. so far, no bipartisan talks have been scheduled. russ? >> whit johnson at the white house thank you very much. publicly, democrats and republicans are sticking to their guns but are there behind the scenes negotiations taking place? let's turn to major garrett, good morning to you. >> good morning, russ. >> given the urgency of the situation, what do you think? are lawmakers talking on the phone this weekend, trying to hammer out a deal?

>> there might be some talks but i don't think this is a productive weekend for negotiations. they've gone about as far as they can go. the white house and congressional democrats agreed to about depending on how you add everything together and which column you put the savings in up to $2 trillion in savings over the next ten years. to get to the $2 trillion they require $400 billion in new tax increases. republicans simply will not go there and everyone's position is not softening. it's hardening. the differences are getting deeper, russ, they're not getting calmer. so even though the senate's coming back next week, what's on the agenda is not budget talks, it's libya and senate republicans will filibuster attempt to talk about libya so they can talk about their own debt and deficit plans but those plans some of the congressional republicans have in the senate can't pass the senate so we'll have some more talk but i still

think intense stalemate. >> democratic sources close to the negotiations are saying july 22nd is the drop dead deadline. you've covered washington for a long time. can you get anything done in congress in three weeks? >> the practical matter is this, russ, if they don't have something next week they can announce and begin working through the system and let all members house and senate begin to digest. i don't think july 22nd is realistic. you need at least a week in the senate and a week and a half or two weeks for the house to deal with this. we are almost already up against the practical deadline to move an enormous debt and deficit reduction pack annual. if something is smaller is done maybe it has some spending cuts that allow this is debt crisis to be averted for two or three months, it seems to be doable. i think we're up against the deadline already. >> who has the most to lose if the debt ceiling is not raised? >> i wrote in a column this week in "national journal" that everyone says there are grave

consequences if there are debt crisis and markets tumble. grave is an adjective but it's going to be a noun for one party or another if this falls apart and there's a debt crisis and that will be decided in the 2012 election. both will position but the voter also finally decide was it republican's intransigence on taxes or the president's unwillingness to compromise and get a deal. both sides believe they can win and when both sides believe they can win and they fight to the end and the end may be ugly. >> major garret of "national journal" thanks so much, we appreciate it. >> russ, thank you. the economy showed some welcome signs of thrive week. the dow was up nearly 170 points on friday, for the week the index gained almost 650 points or 5.5%, the best week for the dow in two years. u.s. car sales are up about 7% last month, compared to the year before and gasoline prices, they

continue to fall, so joining us now a look at what the number means and all of the numbers means is chrystia freeland, great to have you with us as always. >> great to be here. >> dow best performance in two years for the week. does that mean the soft patch in the last couple of months is behind us. >> i don't think it means happy days are here again but it means the fears people were starting to express about a double dip recession, those are receding a little bit. there was a lot of debate about what happened in may, why the numbers were so terrible, and some people were saying look, this is not a sign of the u.s. economy falling off a cliff again. this is mostly the japan effect. remember the tsunami and the earthquake, that really disrupted the global economy and supply chain and ben bernanke in particular was saying that this is the consequence of that, and this strong performance in june and especially i think what i

took the most comfort from was manufacturing. manufacturing confidence really rebounded and that is a forward-looking long-term indicator so that should be what cheers us this fourth of july component. >> manufacturing, about 10%, but about half of the growth we've seen since coming out of the recession. a lot of people look at manufacturing as a big indicator. you mentioned the japan quake but gas prices were also another big headwind on american consumers which drive the economy. now they're down more than 20 cents in the last month. what does that change in terms of consumer spending and consumer attitudes going forward? >> it's huge, it's huge because gas is a big part of people's bills especially now taken has a big impact on people's confidence especially going into the summer when people are driving a lot. i think that fall in gas prices is significant and it's good news for the part of the economy that relies on consumer spending which has actually been pretty weak and even that car number

you cited good for carmakers but overall car purchasing was down because of the japan effect, there weren't the hondas and toyotas for people to buy. >> jobs front and center even though we have the debt ceiling, everyone looking to washington, what are you going to do about this. the june number for the june jobs comes out next friday. people are expecting we're going to hear about 100,000 new jobs were added. we know that's not enough to drive real significant growth and driving down the unemployment rate. what do you see is the jobs picture going forward for the second half of the year? >> i think it has to get better. it's been so anemic. the real issue is how quickly does it improve. because the issue is you need to add about 150,000 jobs per month just to tread water. that's how many new people are coming into the workforce and as you know, rebecca, the really big issue is the long-term unemployment rate is incredibly high, higher than it's been since the second world war.

that becomes a big social and political problem. those people it becomes harder and harder to get back to the workforce, if you've been out of work for more than six months. a lot of people have been. >> good point. chrystia freeland thanks for being with us. >> my pleasure. now to cbs news correspondent elaine quijano for the rest of this morning's headlines. good morning. >> good morning to you at home. it's not going to be much of a holiday weekend in minnesota. state parks and museums are closed, the result of a budget standoff between the democratic governor and republican legislative leaders. all highway rest areas are closed and you can't get a fishing license. social services are cut. 22,000 state workers are temporarily out of work. talks to end the deadlock are not expected to resume until tuesday at the earliest. some 12,000 residents who live near the nation's top nuclear weapons lab in los alamos, new mexico, could soon be heading back home.

the wildfire is no longer a threat. the lab has been closed for almost a week as a safety precaution. the fire burned more than 162 square miles in the past six days. there were no reported injuries. the new york attorney general reportedly is promising to continue a civil fraud investigation of the bank of america. the investigation centers on whether the bank deliberately misled shareholders about massive losses on the books before it bought merrill lynch in 2008. the sports fans.

cbs news correspondent jim axelrod reports. >> reporter: two and a half weeks after the dallas mavericks beat the miami heat for the championship, it looks like that might be the last nba action fans see for awhile. >> i don't think we're closer. in fact, it worries me that we're not closer, and that we spent all this time trying to get closer. we have a huge philosophical divide. >> reporter: nba players are now locked out, joining professional football players who are in the same boat. >> what we're doing on the business of football on the macro scale is about getting a fair deal done, and trying to get back to the game of business of football as quickly as possible. >> reporter: heading into this holiday weekend at a time fans would be dreaming of players who might join their team next season -- >> i think the fans should have

david gravino, owner of iggy's ch clamboy's will show us some chowder. both sides rested their case in the caseiest'ant casey anthony case. >> reporter: another bombshell. prosecutor attorney said to prove the possible means by which 2-year-old caylee anthony died. searches made weeks before her daughter died.

>> the smell of this evidence has been the feature of this whole thing. >> reporter: proving premeditation could be vital to a prosecution case hipderred by a lack of direct evidence there is no smoking gun, no witness to the crime, and no official cause of death, a point the defense capitalized on in the opening statements. >> the defense exhibit d.o. >> reporter: the defense claims kalie drowned in the family's swimming pool and george anthony helped casey hide the body only one witness, george's alleged former mistress. >> he told me it was an accident that snowballed out of control. >> reporter: on the stand george repeatedly denied the affair, the drowning and allegations that he molested casey. all points the defense made at the start of the trial. the only other person who could have verified the claims was casey herself, and she refused to testify. >> it is your decision not to testify. >> yes, sir. >> reporter: holes in the

prosecution and defense, the jury will have to decide which side was able to plug more of them. troy roberts, cbs news, new york. >> joining us now is legal analyst and criminologist casey jordan good to see you. what struck but this latest testimony. >> two big things. we're sure that cindy anthony was lying about doing the computer searches on chloroform. she had to have been at work that day including the general counsel of the company she worked for, explained about the time cards and her computer logins and on the day she said she searched for chloroform she was at work, not only that, we have her nurse supervisor, explained she couldn't have had time off in the middle of the day and finally we had forensic evidence that showed that the brain dust for lack of a better word that they had said had to have been the result of a bad autopsy and the question of

whether she was little kalie was the victim of an accident inorganic material, sediment from the flooding so a great day for the state. >> casey anthony refusing to testify. what does that say when a defendant does not testify? >> the judge is going to remind them she didn't have to testify. that was part of their voir dire and because of the opening statement they have spending five or six weeks expecting her to testify. when it didn't happen, everyone was disappointed, because the defense had raised a level of expectation. it's true they don't have to prove anything but they had put out this fact pattern, this scenario and then they failed to corroborate it in any way. only casey anthony could have done that. most people think the defense case crumbled. >> what can we expect to hear during tomorrow's closing arguments? >> you'll hear organized arguments about the evidence. the evidence can fall in either direction depending on your

perspective. we know the state is going to go methodically through all of the facts they're going to say support first-degree murder and the defense will say they didn't prove the cause of death, they have never really refuted the accident scenario, they haven't proved she didn't drown and you have to leave it to the jury to decide which way they're leaning towards. >> there's the phrase reasonable doubt which the defense has to prove. when you look at the case and following it from the beginning do you think the defense did a good job trying to prove that? >> i think the defense made some really bad tactical errors with that opening statement. i think they would have done much better to present some kind of accident scenario without painting a picture of how it happened. they did not address the 31 days in which casey anthony never reported her daughter missing. even under their scenario they never explained the allegations of sexual abuse. this jury is left with perhaps some doubt that isn't

reasonable. all of their questions and the scenario that was laid out by the defense was never really shown to them. they don't know what happened to caylee, but it's really down to which side can convince this jury that it fits their scenario. >> quickly which way do you expect this to go? >> i think they'll compromise and go to aggravated manslaughter. i think after yesterday they'll go back to manslaughter. first degree. >> when the verdict is reached we'll have 48 hours mystery. lonnie quinn with another check of weather. >> right to my weather headlines, searing heat in arizona today, no rain in sight for you. yuma, arizona, close to 102 degrees. as a matter of fact, a flip-flop those numbers, yuma, arizona,

hypothalmus and that creates a craving. >> it's all of these sort of exterior things taking place around us. >> right. >> internally there's things that can create cravings, exhaustion, fatigue or stress can create a craving. >> also alcohol intake, dehydration, sometimes we confuse dehydration with true hunger and the sight and smell of food and basically for the fourth of july we have many of these things going on, the alcohol, lack of sleep and sight and smell of food. there are things you can do to combat the triggers >> like what, frances? >> turn your kitchen into a skinny kitchen. adjust your lighting. super bright lights, like what you might find in fast food restaurant makes you eat really fast and of course when we eat quickly we eat more and really dim lighting like romantic restaurant lowers your inhibitions so you eat more, drink more. go with about a 60 to 75 watt

see you later on tonight on the "cbs evening news." elaine quijano is at the news desk with the rest of the headlines. in an attempt to appease the widening anti-government protest movement, syrian president assad fired on the protests taking place. they launched another violent crackdown. at least a dozen people were killed in one of the largest protests ever. on estimated 100300 civilians have been killed since the demonstrations began four months ago. venezuelan president hugo chavez is trying to not disclose what kind of cancer he is battling. allies say chavez will definitely run for re-election next year. at least three deaths in mexico are blamed on tropical storm arlene. heavy rain is expected to

continue for the next two days and that could trigger flash floods and mudslides in mountain areas. arlene, the atlantic season's first tropical storm, is breaking up as it moves towards the pacific ocean. six weeks ago arnold schwarzenegger admitted to fathering a child outside of his marriage to maria shriver, his wife of 25 years. now shriver was filed for divorce. serene branson of kcbs divorce. >> reporter: the documents obtained show irreconcilable differenc differences. she's seeking spousal support. >> it's clear now they didn't have a premarital agreement. >> reporter: west l.a. attorney steve mandel was shocked the high powered payer didn't have a prenup and agreements have long been a common practice in old money families. entertainment figures like arnold tend to protect

intellectual property. >> any character will be community property, an asset so when arnold wants to expand on that character he has to go to maria and get her permission. >> reporter: they split after 25 years of marriage at a public event in may, schwarzenegger said they were working out their differences. >> we both love each other very much. we're very fortunate that we have four extraordinary children and we are taking one day at a time. >> reporter: days later arnold admitted to fathering a son 13 years ago with their live-in housekeeper. she went public with her story saying maria confronted her about her son's father. the divorce filing shouldn't come as a surprise. the pair remains on speaking terms. according to the divorce document, maria shriver is seeking joint custody of the two underage children, 13-year-old christopher and 17-year-old patrick. serene branson, cbs news.

britain's duke and duchess of cambridge prince william and wife kate are celebrating canada's birthday, canada is treating them like rock stars everywhere they go. this morning they leave ottawa. rosemary barton is in ottawa. good morning. >> good morning. >> tell me about the reception they're getting. >> it's been spectacular. we're used to royal visits but this has become almost a celebrity visit. you said there is royal mania. it's more about kate mainia, people's first chance to see the duchess out on a royal tour, their first royal tour as a married couple. there have been tens of thousands yesterday for canada day, our nation's birthday, 300,000 gathered on parliament hill. there's not a lot of space up there so people were crammed in to get a good chance to see the duke and duchess.

they have really performed as well. they are throwing themselves into the crowds, wanting to touch everyone's hands, wanting to say a word to everyone, they're eating it up as well and quite surprised it's happening. >> tell me what's on the schedule today. >> doing a tree planting ceremony, something done all the time at the government house, where the queen previously planted a tree and going to meet with a number of canadian war vets before they head off to get back to the reception, where the reception will not be as warm. there may be minor protests there. >> rosemary barton in ottawa, thank you so much. joining us with more on the royal tour is cbs news royal contributor victoria arbiter. good to see you. our couple is going to a cooking school. do they cook? >> the plan for the trip was to incorporate the serious with the fun. this is where the fun is really going to get started.

kate is a good cook. she's the duchess and wife of the future king of england but enjoys the domestic side of their life as well. they're keen to have this private normal life. they've said no to civil servants. she was spotted at the supermarket buying liver for william's dinner. the plan is to roll up their lives and learn with the students for a few new dishes. >> kate's getting rave reviews for outfits. does someone else pick her outfits? >> she's been picking them out but she dresses in accordance with the country's colors or pays homage to the country she's visiting. the fact she arrived and stepped off in a design fashionable from canada but based in london. yesterday she had the maple leaf. yesterday william had a tiny

canadian pin and yesterday kate wore a maple leaf the princess wore back in 1981. >> how is she handling the attention? >> brilliantly. the camera is on her all the time. if there's a woman where she's yawning or looks bored or sleepy that picture would be analyzed and sent off around the world. they were starting to wilt a little bit in the 90 degree heat. it was a long day. factor in the jet lag, but they're holding up well. >> how excited were they? >> very excited. canada is sentimental. her grandfather served in calgary, flight instructor for the raf. william referenced her grandfather who sadly passed

we continue our "taste of america" tour with a trip to baltimore, which is located right at the top of the chesapeake bay and where they are very serious about crabs at the pier point restaurant in baltimore, cooking up classic maryland cuisine and the delicious crab cakes for the past 22 years. our pick for the best crab cakes goes to those made at peer point restaurant and here to show us how to make the perfect crab cakes is nancy longo. what is it about maryland that makes perfect crab cakes? >> maryland hats briny salty water and that makes the perfect crab. that's one of the reasons because the taste adds to the flavor naturally. we don't have to add a lot of other stuff to it. so we turn it over, rip our

apron off the back. take the shell out. >> you made it look so easy. >> kind of like the ladies on the eastern shore. you break it in half and what i want to do is pull one leg off. this back fin here is the best part from the crab and this part, we take this and hammer this so that we get our lovely craw meat. >> got you. you don't have to hammer it. >> if we want to get that other piece off you get this wonderful clean thing. you pick it, you give it to a friend. >> i'm your buddy, i take care of you. >> we have two pounds of crab meat. >> how many crabs? >> you need probably at least a dozen crabs to get a pound. >> okay. >> this is called lump and this is jumbo lump because we don't

use a lot of beading. we use a lump, smaller crab to bind it together. >> gotcha. >> at this point what i would do, rebecca, i ask you to crack the eggs into the bowl. >> you want one, i'll try the other. >> i got one, you do the other. okay, so we now have our eggs in there. >> got it. >> take the crackers, we actually grind them up into cracker meal which is really important. that's really what we're using as our binder. >> no bread. cracker. >> no bread. i'm going to add mayo to that and stir that all up. >> sure. we have the seasonings. >> dry mustard and old bay, another important ingredient. some good dijon mustard, worcestershire sauce, parsley, and now you'll see this will

make a wonderful paste, that's actually the binder. we'll add our crab meat to it. i'll ask you to gently fold from top to bottom. >> so you're not mushing it all up. >> maryland crab meat has this wonderful fat and mustard in there. for folks if they want to buy crab meat buy fresh crab meat. >> we are running short on time. there is a process where we need to smoke it. >> we take some of the crab meat, aluminum lined tray, line it into our grill with the charcoal and makes a wonderful smoked crab cake. >> you put them in the pan, fry them up. how long are we having them go for? >> don't take very long at all, two minutes each side. >> get them browned off. >> i want to make sure we get to the secret ingredient. what do you consider to be the secret ingredient? >> cracker moo el. >> cracker meal. we don't taste any bread and

♪ born in the usa, baby. welcome back to "the early show." i am rebecca jarvis. >> and i'm russ mitchell. we continue our "taste of america" a festival of foods and highlight some of the best cuisine the u.s. has to offer. coming up we'll taste the wines of napa and a man who began selling key lime pies by the side of the road. now they make 1,000 key lime pies a week. >> also headed to the lone star state for texas barbecue. wayne miller shows us how his family has been serving up br

briquettes. first lonnie quinn has a check of the weather. >> we talk about the fourth of july and chance of storms sparking up here and there. presidents' unbelievable, the majority of the country will be dry. let's get to the hot spots and chilly temps. it's the temperature spread, yuma, arizona, hits 118 degrees today. coldest spot, wilson, wyoming, down to 39, minton, north dakota, sunshine, 83 degrees and on monday your fourth of july look at the towns across the country named independence, independence, new york no, 77, with the sun, independence, missouri, 90, come monday you have a storm chance. here's a closer look at the weather for your weekend.

now our guest on the plaza this morning has more delicious tastes to offer up to us, it is called magnolia bakery and one of new york city's best known old-fashioned bakeries, best known for its classic butter cream cupcake and it is rare to walk by this spot, i live right near their upper west side location, you'll always find a line stretching out the door, which is why we're happy they joined us on the plaza, we have cupcakes throughout the audience behind me and bobbie lloyd of magnolia joins me. welcome. how is it the cupcake is so july 4thish if you will? >> what's more american than a cub cake, kids love them because they're little. everyone has their own treat? >> when did the cupcake have this big emergence?

people replaced birthday cakes with cub cakes. it's huge. when did that whole thing -- >> it left mom's kitchen in 2003 wennackery from "sex and the city" with the pretty magnolia cupcake. it went national. >> reporter: "sex and the city" put you guys on the map. the classic is buttercream. this is the butter cream. what is the secret, is there a secret ingredient? >> there is no secret, we bake it like mom in small batches. we use little mixtures and we make them constantly. >> reporter: you make them 24 hours to serve the public. there is a big crowd outside this gal's bakery. there's no better transition than going from cupcakes to napa valley and wine. ♪ only the wine talking, only the wine ♪

>> we're back on the road for our "taste of america" tour, we're back on the plaza, napa valley in california where they produce some of literally the best wines in the world, it is home to over 400 wineries, they produce more than 9 million cases a year, total sales over o$10 billion, and here is "food and wine" executive wine editor ray isle. we love having you here. you always bring something great. >> i brought wines from napa valley the wine place in the u.s. when they made wine places to grow grapes they look at napa valley and said this is going to be perfect for grapes, perfect climate, perfect soil, perfect weather, perfect everything. consequently the wines are really good which is a good thing. >> you brought bargain wines and that's the weird thing about napa, it tends to be pricey because it's well-known. there are great deals there.

this sauvignon blanc, 15 bucks a bottle, classic sort of picnic in a park. napa valley chardonnay, beringer chardonnay, they pulled back on the butteriness, 15 bucks. >> i really like this one, you can pair it with pretty much anything. >> roast chicken, pasta salad, and rosette, from pa valley, frog's leap, it's kind of fun and pink frog, grenuitte.

i took french that was the one word i learned. >> in the park. >> another word in the park, it is the time for going to the park so makes complete sense. this one. >> castle rock, napa valley m merlot. >> the movie. >> this is wonderful grape that got unfairly beaten up, 10 buck, 12 buck bottle of wine with a lot of flavor and richness. hard to find a 12 buck bottle of wine from napa valley. >> it has a lot of richness for merlot. it's a good pairing with dark meat. >> with burgers, sausages, ribs,

br brisquettes. >> one thing napa valley is known for cabernet sauvignon. if you want a good napa valley cabernet, splurge a little, 39 bucks a bottle. this is a 39 buck wine tastes to me like a 75 buck wine. it's a fantastic producer, and just this is a wine you can drink now, put it away for 10 or 15 years and you could have it with a gorgeous steak. you could have it without anything at all. >> which one is your favorite choice of the bargain price? get in on that actually. definitely. >> of the bargains for summer, dry rosette is a cool thing for summer. got the fruit of red, got the acidity of white, compare it across the board from a salad to a hamburger and it's a fun wine. you don't have to think about it. chill it down a little, pour it.

♪ we're taking our "taste of america" to the lone star state bash queue trail. texas has some of the best slow cooked meats in the country. at louie miller barbecue they've been serving up barbecue since 1959. here to show us hue to make the perfect brisquette and ribs, tell me what you have here? >> we have brisquette and chuck beef and ribs. they're looking for a small

pound, quarter pound, pound and a half, the smaller it is the more tender it is. and minimal amount of fat on half. brisquette, you want something pliable not so stiff and front end, as thick a cut as possible. >> okay and in texas, mostly about beef. >> i think it stems back from the cattle drives in the mid 19th century when texas opened up as a republic and new member of the states, there was a lot of land and a lot of places for cattle to roam. >> you dry rub here. >> yes. it's black pepper and salt, in this case kosher salt. >> anything to prep the meat before you put this on? >> yes, we'll trim a bit of excess fat off the top and the heel and then it's time to rub

it down. >> how much do you put, how much of the rub you put on? >> we'll coat this liberally. we believe that at least from our establishment pepper is the fifth food group. >> okay. today we're going to use a charcoal pit. >> correct. >> atti your place you use a bi time barbecue pit? >> we have three varieties. we have an upright all steel pit primarily for smoking sausage. we've got a flat brick pit which does most of our brisquette and a mobile pit, a combination of the two. >> for our purposes a rub on that and on the fire. what side do you put it on? >> the lean side down, put that on the fire.

the fat up so the juices can run down. >> how long will this stay on the grill? >> this will stay on the grill anywhere 10 to 12 hours. usually about an hour and a half per pound. that's the general rule of thumb. >> being a guy you want to turn it every now and then. do you turn it? >> you do need to move it around because of the close proximity to the heat. you'll shift it around so it doesn't get overcooked on one side. >> let's take this off what you already prepared here. whoa, that looks good. all right, get my napkin over here and get ready for this. while you're doing that, we're asking all our chefs today, what is the secret ingredient? what makes your place so different? >> well, i think -- >> you can tell me. >> the simplicity of the rub, and the tender loving care we offer each piece of meat. there's no commercial large

an amazing "taste of america" crab cakes, enjoyed barbecue in texas, wine from fla pa valley and time for dez sert. for that rehead to the florida keys where key lime is the star ingredient in their official pie in florida. no one makes a better key lime pie than ones by at warding winning key west key lime pie company. here is jim brush president of the key west key lime company. we have two different types of lime. we have the key lime and the lime more people are accustomed to. persian limz limes are not traditional. they're smaller. when they're ripe they turn yellow. persian limes stay green the entire time.

>> we are going to make a legi key lime pie. >> we'll add whipped topping as part of the fill. we'll incorporate that. while i'm whipping this, add the juice slowly. it will start to chicken up more. stop right there. okay. see how it gets a little whippy there. >> what was in the dip? >> sweetened condensed milk. key lime juice, sweetened condensed milk. some people use an egg product. this is an eggless product so it's not baked. pop it in the freezen and it's ready in an hour. we have enough juice in there for now and we've got our finished whipped topping, finished pie filling which we'll put it in the crust. this has been in the freezer in the fridge. >> this is your trust. >> the finished crust.

we'll make a crust, start with butter. >> okay. >> a little butter in there. >> you're adding that to -- >> graham cracker crust. a little bit of brown sugar, a sweet flavor. some people put different types of nuts in there, incorporate all of that together, gets nice and thick. might need a little bit more butter, okay. >> when you're finished with this, you start pressing it in. this is an issue i run into. if you're doing something like this, how do you make sure it coats the pan and do you it evenly in the right way? >> because you have butter you start with a non-greased dish. where did they steal my pounder? you pour your filling and crust in here, pat it out, coming up, you push it up the side of the plate. >> gotcha. >> that's all done, pop it in the oven 10, 15 minutes. let it cool before you put your filling in. take your filling, see how it's thickening up, you start pouring

that in, smooth that out, run it around. >> once you're finished filling it, is there any finishing touch that needs to go on it or is it done? >> if you want to put topping edges like on the pie, we don't feel that key lime pie needs a whole lot of stuff on top. that is the start. >> it is the start. i'm guessing then you would see the secret ingredient is the key lime pie. >> absolutely. if you're not using 100% key limes you're kidding enough. >> i can't wait to try this. i'll try a quick sample to see how you did. mmm, delicious. you don't kid around when it comes to key lime. >> i try not to. >> thank you so much. >> my pleasure. >> don't go away. we'll be right back with all of our wonderful guests who joined us today as we took a taste of america on "the early show" on cbs.
